Kaiso means 'seaweed' in Japanese.

Our knives come from relatively unknown blacksmiths in small villages all over Japan. These craftsmen make the tools for the chefs, farmers, and fisherman in their communities.

Seaweed is a significant part of Japanese culture. Each region has their own type of seaweed and way of preparing it. Likewise, knives vary by region and blacksmith. We hope that the knives we offer will connect you with the places they come from and the hands that make them.

Based in Los Angeles, California, our goal is to find these craftsmen and showcase their products along with our handcrafted handles and sayas (knife covers).
